Arizona Cardinals

It's churro time! We enjoyed this sundae from La Ristra to kick off Week 3 of the football season. We have eaten many, many churros since moving to Arizona. It's a perfect sweet treat for your Cardinals party.


2023

We kicked off the 2023 football/dip season with a Cardinals loss to Washington and this savory dip. Next time I would not use processed cheese, but we are traveling this week so I played a little game of

'Clean out the Fridge'.


Hatch Chili Arizona Dip


1 onion

1 lb ground chicken

taco/chili seasoning

1 tomato

1 ear of corn

1 lime

hatch chilis

1 jalapeno

sour cream

cream cheese

cheese (I had some cheddar and a Mexican blend)

green onions

Saute ground chicken and chopped onion- layer this in the base of a cast iron pan

Top with all of the *ingredients and bake at 350 for 25 minutes

Enjoy with tortilla chips

*I measured nothing, I seriously used what I had left this week

There were high expectations for the Arizona Cardinals this season. Instead, we have lived through the definition of underwhelming.

Now we are just looking forward to the trainwreck that will be the in-season Hard Knocks and this delicious Southwest Cardinals Bowl.


For a base, I chose cauliflower rice. I topped that with:


Avocado slices

Corn

Pork Carnitas

Black beans with sauteed onions and hot sauce

Pickled onions

Hatch green chile

Cheddar cheese

Sriracha mayo

Lime

Sour cream

Tomatoes (chopped with olive oil, salt and pepper)

The Bucs got their third win of the season against the Arizona Cardinals. That stat brings us to 3 and 6, not exactly the season we were hoping for. We revisited the deliciously easy cheese crisp recipe (see below). We first made this 6 years ago, and I am not exactly sure why we haven't made it every day since. We added a bit of sour cream and a sliced red chili pepper. All versions were delicious, and man camera phones have come a long way.

I will say that coming up with a menu for indigenous items from the great state of Arizona was a bit of a struggle.  When I ask for Spencer's input, he invariably says, "Stew". As in Cardinal Stew. Or Patriot Stew. No Help.

Luckily, through the genius of the Google machine, I discovered extensive homages to the mighty cheese crisp. So simple and delicious.

Tortilla Soup-We used the Bear Creek (Holla!) brand and topped with tortilla strips, avocado, lime, and sour cream. I could eat this all day.

Cheese Crisp Recipe

Preheat oven to 400

Butter a tortilla all the way to the edges

Cook for 5-10 minutes (until it begins to brown)

Pull out, top with Cheddar Cheese (you can also add green chiles, but it is not necessary!)

Cook for another few minutes until the cheese melts.

Then shove it in your face and go make another one.

Arizona tea-Yep, made in NYC, shush, it says "Arizona" on the can. I dig that Lite Arnold Palmer.
