The Thursday Night game between the Falcons and Bucs was an instant classic. We grilled up some peaches with butter on the Traeger. I flipped them after a few minutes and topped them with honey, sugar, and cinnamon. They were finished off with a dollop of whipped cream and Falcons-colored sprinkles.

We just procured tickets to the Falcons at the Cardinals game in a few weeks. My football worlds once again collide! Since I am making dips this year, I decided to do a quick salsa. Enjoy!


Atlanta Falcons Peach Salsa


1 diced peach

1 ear of corn

1/2 finely chopped red onion

Cilantro

A handful of chopped tomatoes

1 chopped serrano pepper

Lime

Salt


Mix all of the top ingredients, mix with lime juice and zest, add a pinch of salt. We served these with Tostinos Habanero Tortilla Chips.

This week we are coming off of an overseas adventure celebrating my very belated (thanks Omicron!) milestone birthday. We were lucky enough to go to Amsterdam and Paris. There is a nine hour difference, so I am still playing catch up; I took the easy route for this week's football salad.


For a Falcons spin on a classic caprese, I used heirloom tomatoes, peaches, mozzerella, basil, and drizzled all with olive oil and balsamic and a little salt and pepper. Delicious with a side of crusty French bread. I needed easy this week, and this fit the bill perfectly.

This week has been a whirlwind. When life gets extra busy, I go for the stress-free cooking route. This was probably the easiest football day food I have ever made.

Falcons fans, we can poke ourselves with the skewers after eating; that'll be less painful than watching this season.


Peach Caprese Skewers


Ingredients

Cherry tomatoes

Fresh peach, diced

Mozzarella ball, cubed

Black olives

Fresh basil, torn into bite size pieces

Olive oil

Balsamic glaze

Salt and pepper


Stack ingredients. Serve over a drizzle of olive oil and balsamic glaze. Salt and pepper over all.

2017

Rise Up! The Atlanta Falcons are playing in the NFC Championship game. In honor of this illustrious event, we decided to make some home-based nachos.

The Dirty Bird Nachos with Peach Guacamole

Chicken

3-4 chicken frozen chicken breasts

1 jar of hot sauce (we used Texas Pete's original)

4 cloves of garlic, minced

1/4 cup of lime juice

1 can of black beans

1 cup of diced onions

1 sliced jalapeno

1/2 cup chicken broth

1/2 cup water

salt

pepper

cumin

chili powder

crushed red pepper flakes

Combine all in a crock pot, low setting for 8 hours then shred chicken with two forks.


Peach Guacamole

2 avocados, mash

1 cup sour cream

1 diced peach

1 chopped jalapeno

1 chopped tomato

1 packet Concord guacamole mix

Mix all, top with the juice of one lime & chill for at least an hour.


Cheese Sauce

2 TBSP Butter

2 TBSP flour

Whisk and heat for a few minutes, then add 1 cup of milk.

Stir in 6 ounces of cheese (I used the shredded Mexican blend)

Then add a dash of chili powder, a big pinch of salt, and 1 chopped jalapeno.

Sour Cream Topping

1 cup sour cream

zest of one lime

1 TSP olive oil

salt

pepper

cilantro

Layer the chicken onto the chips. Top with some of the remaining sauce from the crock pot, lettuce, sour cream topping, cheese sauce, guacamole, tomato, and whatever else your nacho loving heart desires.

2016

I haven't been posting for the past few weeks, as I have been lucky enough to go to a few Falcons games. I won tickets to the Sunday game (final season at the Georgia Dome!) vs. the Green Bay Packers. Four days later we were in Tampa at Ray Jay to watch Thursday Night Football, featuring the Tampa Bay Buccaneers and the Dirty Birds. My new team and my old team! So, we let the stadiums do the cooking for us. We simply had to try this $20 hot dog in the Georgia Dome (surprisingly good), and a Cuban Sandwich and Nachos from Raymond James Stadium (surprisingly bad. Who serves a cold Cuban?!) Seeing John Lynch's number retired at half time made up for the terrible food.
